I like spring rolls and egg rolls and have recipes that I use for both. Having some extra wrappers around and finding this book, I have been on a tear. I made the Vietnamese Fresh Spring Rolls with Shrimp a couple of days ago, and am still getting rave reviews. They were simple, although I am still learning how to use the delicate wrappers after soaking them for maybe 16 seconds. I have cheated and used two wrapper, nobody noticed. it is well worth the time to get the fresh herbs to complete any of these.
