I purchased this as an e-book to use on my tablet so I could it use it on the countertop while preparing the many recipes in this easy-to-follow cookbook with simple but delicious menu ideas. (Shortly thereafter I also purchased a handy Smart Stand w/Stylus to hold my tablet upright.) I am 69 years old and was using my grandmother's old Presto on-the-stove pressure cooker but decided to treat myself to one of the newer electric pressure cookers, a GoWise 4 qt. which I also bought through . I thought Cooking Under Pressure would help me not only familiarize myself with the newer technology but also give my recipe repertoire a lift, which it has and will. For new pressure cooker users, Part One offers the basics of pressure cooking along with helpful maintenance and repair information. There are also special techniques and useful methods for pressure cooking included such as how to make popcorn, hard cooked eggs, and do canning. Many new pressure cooker users are unfamiliar with cooking times for various foods or, like me, needing reminders over time. This informative cookbook graphically describes cooking times for various meats, seafood, beans, rice, grains, and vegetables in Part Two so foods not included in the recipes which follow can be correctly prepared. Along with 29 original recipes, Part Three goes on to a wide variety of over 150 other recipes for all types of foods including some delicious sounding dump recipes, desserts, and vegetarian fare. I have made a beef stew in 40 minutes with potatoes, carrots, and celery which was moist and tender and very tasty. I did not have "real" carrots so used a supply of dehydrated diced carrots, which rehydrated and plumped beautifully while the potatoes held their shape.
